Finished Baking

These brownies flopped badly this time....




Amish Gooey Rhubarb Rolls #104884
Recipe by Juliesmom

This is based on a recipe from a copy my daughter has of the cookbook “Amish Cooking” compiled by a committee of Amish Women, published by Herald Press. In the book, it is known as “Sarah Schwartz’s Rhubarb Rolls” but it makes such deliciously gooey rolls that the new name is more apt!
8-10 servings
30 minutes 15 mins prep
Rolls
2 cups flour
1 teaspoon salt
2 teaspoons baking powder
3 tablespoons cold shortening
1 cup sweet milk
3/4 cup granulated sugar
2 dashes nutmeg
1/2 teaspoon cinnamon
1/2 cup butter, softened
2 cups finely chopped rhubarb
Sauce
1 cup hot water
1 tablespoon butter
1 cup sugar
4 teaspoons flour
1/4 teaspoon salt

Preheat oven to 350 degrees F.
In a bowl, sift together the flour, salt, and baking powder.
Using a pastry knife or forks, cut the shortening into the flour mixture, then add the milk and mix well.
In a small bowl, combine the sugar, nutmeg, and cinnamon; set aside.
Roll the dough out on a lightly floured board to 1/4 inch thick, spread generously with the softened butter, then spread with the chopped rhubarb and sprinkle over the sugar mixture.
Roll up the dough like a jellyroll or cinnamon rolls, and cut into 1 1/2 to 2 inch pieces.
In a saucepan over medium heat, combine the hot water, butter, sugar, flour, and salt, and bring to a boil; let boil for 3 minutes to make a sweet sauce, then remove from heat and set aside.
Butter a 9x9-inch pan, then place the dough roll slices in the pan; pour the sauce over and around the slices.
Bake at 350 degrees F for about 12 to 15 minutes or until light brown.
Notes: you can substitute diced apples for the rhubarb.

Finished up baking day with brownies and Amish Rhubarb Sweet Rolls. I screwed up somehow on the brownies. They aren`t the same as last time because all I had was bread flour and sweetened chocolate squares and I left off the peanut butter icing because we`re short on peanut butter. I tried to fancy them up with some powdered sugar and melted chocolate.
The rolls seem nice but I left off the sauce part so they wouldn`t be so messy taking in our lunches. Then I had to deal with the mess.
Hubby`s out back spacing the bricks for me and they look much better! We decided to add two more round trellis, so my Dad brought them home for us and we put those up.
Supper will have to be hash browns and fried eggs tonight. Make lunches for tomorrow and then Coronation Street and night "one" of this weeks Rock Star. Relax before starting the work week all over again.

chips & fried eggs is a meal that brings back memories - an easy but delish meal! oh - chips are similar to your fries only thicker. don't you hate the mess after cooking? doesnt matter how hard I try, the flour always ends up all over the bench!

O! how yummy does that all look if it is Amish I love it if it is rhubab my husband says it is his favourite food so please share the recipe with us it does look so nice.

You must be a wonderful cook and it is so nice to see a kitchen full of the lovely things that make it part of a very warm home. I look forward to getting back to your blog and seeing some other nice posts.

Hope yours turn out nicer than mine. I had to use a couple of substitutes but they still weren`t too bad. The oatmeal cookies were the best though.
