Next to Rhubarb Custard Pie...the recipe is in this blog somewhere under recipes, this is yummy. Had 4 cups of frozen rhubarb left in the freezer from my Mum`s garden so I made some the other night and it didn`t last long. The picture isn`t the prettiesr, but it was quick, easy and good!
4 cups rhubarb, cut into 3/4 " pieces
1 cup sugar
1/4 cup flour
1 cup flour
1 cup brown sugar
1/2 cup rolled oats
1/
2 cup melted butter
Mix rhubarb, sugar and flour and put into 8" x 8" x 2" glass baking dish.
Combine flour, brown sugar, rolled oats and melted butter and sprinkle streusel over rhubarb mixture.
Bake at 350 for approx. 35 minutes.
I`m still here sewing....and sewing...and sewing, in my spare time. The frontroom still isn`t quite the way I want it so there has and is being some revisions. Pictures will appear eventually. One more day and it`s the weekend and then a whole week of holidays for me :)

Not the biggest fan of Rhubarb but anything with a streusel usually is yummy!
I wish you lived closer....I would doggie sit Elvis and eat all your rhubarb crisp, or pie, or anything you could think of the make with rhubarb.....
Ooooh, it looks lovely! Very scrummy indeed! I love rhubarb, this year ours was made into jam ~ rhubarb and ginger jam, my favourite. Perfect with a hot cup of tea and some yummy homemade bread! I don't think I was *ever* made to be a size 10!

Rhubarb is one of my all time favs! Thanks for the recipe. I may try this with cherries, Mum's two trees went into overdrive and you know I have a garbage bag full to do stuff with?
